We’ve arrived at the last of our coffee from Two Sparrows Roasting Co. from the tiny town (less than 90 pop.!) of Round Top, Texas. Sad day! But, it’s also a happy day because I have an organic Guatemalan coffee to share with you today! This one promises to be nutty and chocolatey and the other two coffees from Two Sparrows have been really great, so let’s dive in!

TWO SPARROWS ROASTING CO. GUATEMALA FINCA BREMEN ORGANIC

Two Sparrows’ excellent roasting and sourcing is just proof that you can find top-notch roasteries anywhere in the country, today. If a roaster has access to gas, electricity and the post office, then the coffee world is their oyster! This morning’s coffee is a washed mix of Bourbon, Typica, Catuai, Maragogype and Caturra grown on Finca Bremen at 1100 meters above sea level. Finca Bremen is located near the town of Purulhá in the department of Baja Verapaz in central Guatemala. The farm has 40 years of experience in coffee growing and uses organic practices. Two Sparrows give us flavor notes of, “strong taste of chocolate, macadamia nuts and cardamom. The aroma is floral and the light acidity is easy on the palate.”

I used my standard pourover setup of a 1:16 ratio of 28g of coffee to 450g of water in a notNeutral Gino with Kalita 185 white filters. My Handground grinder was set to 3.5 although I probably could have gone a little tighter with the grind. I used Third Wave Water to brew my cups.

After giving this cup some time to cool down, I was greeted with a dynamic, lively coffee that lived up to Two Sparrows’ descriptors. There is a gentle citrus acidity on the front end of the sip that gives way to a lot of nutty flavors in the middle and end. There is a milk chocolate note in there, too, along with a creamy body to this coffee. I was also getting some spice notes in the finish and aftertaste of this coffee. I don’t want to go out on a limb and call it cardamom as I haven’t used that spice in a long time, but there is a spicy, exotic note in the aftertaste that is probably similar to it. This is a clean coffee and fairly basic, but easy drinking and delicious with a lot of familiar flavor notes, so that makes it a winner for me!

I really enjoyed all three coffees from Two Sparrows and I would love to try more of their selections as they roll them out. Of the three, I think the Tirra honey from Costa Rica was my favorite followed by the natural Ethiopia and then this one. “Last place” sounds bad, but we’re talking about three excellent coffees that were well-roasted, here, so “third place” is still damn good! Fans of milk chocolatey, nutty Central American coffees will be over the moon with this Finca Bremen, though, so buy any of these, and I would say anything from Two Sparrows across the board, with confidence! Awesome job!
